DOP. Visit once a Terra Madre and Salone del Gusto, in Torino, and your life will be changed. I am still amazed by the profound power of specific products like Jamon Iberico Puro de Bellota. Why the Spanish have this and Romanians, not? History is here.

You see in the photos the shape, the setup of the product. The whole communication context, colours, table cloth, people behind. The simple proudness of proposal. The force behind keeping the product alive. It has personality, culture and flavours in it. An excellent example of how to fight, defend, and enjoy food, with a local but impressive twist.
